PICO DE GALLO

 

In Mexico they are called pico de gallo a range of regional salads, which always include vegetables or diced fresh fruits. Rooster peaks are a common accompaniment of many Mexican dishes. The most common variety of this salad is a mixture of tomato, onion, cilantro, and chopped jalapenos, whose colors correspond to the colors of the flag of Mexico. It is usually eaten with tortilla chips, muffins and Mexican quesadilla.
